Our Story
Cactus Creek Coffee traces its roots to a moment when opportunity, timing, and a love for great coffee lined up just right. Robert Sanchez, a veteran with two decades of military service and countless cups of coffee fueling those early mornings, found the perfect way to reconnect with community and family. After purchasing the business from a military family in Abilene, Robert and his wife brought their own twist - combining his steady reliability and her barista know-how.
Their shared goal has always been simple: serve up genuinely good coffee and homestyle treats, create friendships along the way, and build a local tradition where everyone feels welcome. The values that guided Robert's service - discipline, integrity, and loyalty - now shape each cup and every customer interaction, turning a mobile coffee trailer into a tight-knit part of McGregor's daily life.
From Service to Sips
Cactus Creek Coffee grew right here in Central Texas when Robert, a veteran who spent 20 years depending on good coffee and grit, took a leap by buying the business from another military family. It was more than just a change of hands - it was a fresh start shaped by hard work, family ties, and the belief that every cup could carry a story. With his wife's barista background and their commitment to quality, they set out on a new adventure, adding personal touches to beloved classics.
Every day, the mobile trailer rolls into McGregor and the surrounding towns, offering more than just a caffeine boost. It brings a sense of connection, small-town warmth, and the experience of coffee that's as authentic as the folks who make it.

Founder & Owner
Robert Sanchez
Cactus Creek Coffee serves McGregor, Waco, and nearby Texas communities as a mobile coffee trailer led by Robert Sanchez, Founder & Owner, a 20-year military veteran who knows firsthand how coffee brings people together. After purchasing the trailer from a fellow military family in Abilene, Robert, his wife, and their kids brought their own spark to the business, blending military discipline with genuine hometown hospitality. Robert's wife draws on years of barista and service experience, always making every order feel like it was made for an old friend. As a family operation, every can of cold brew, fragrant cinnamon roll, or frothy latte is a little piece of their story - crafted for locals by locals who care. They proudly display certifications like the Texas Food Establishment Permit and Mobile Food Unit Permit for peace of mind. Being family- and Latino-owned, this team believes in hard work, quality, and celebrating life's small wins together - one cup at a time.
